Simple egg salad


Serves: 2

4 hard cooked free range eggs, peeled and chopped
2 tbsp mayonnaise, or Greek yogurt
1 medium celery stick, finely chopped
1 tbsp finely chopped chives, or parsley
1 tsp lemon juice (optional)
sprinkle salt and pepper
1 spring onion, roughly chopped
Prep: 5 mins

Cook: 15 mins

Preparation Method

  • Stir eggs, mayonnaise, celery, spring onion, chives and lemon juice in a bowl. Season with salt and pepper.
