Tuna and vegetable salad


Serves: 4

1 medium iceberg lettuce, torn into pieces
6 tomatoes, sliced
2 hard boiled eggs, cut into wedges
1 can tuna, drained and flaked
1 small cucumber, cut into pieces
1 medium onion, finely chopped into round pieces
drizzle olive oil
pinch pepper and salt, to taste
2 tbsp lemon juice (optional)

Preparation Method

  • In a bowl combine tomatoes, onion, iceberg lettuce, cucumber, hard boiled egg. Flake tuna and add to the salad. Dress salad with juice 2 tbsp lemon juice and about 2 tbsp olive oil. Season the salad with salt and pepper and toss.
