Super Mum Muffins

Ingredients

Serves: 12

225g Gluten free flour
150g light brown sugar
1 free range egg
1 tsp baking powder
3 ripe bananas, mushed up
175ml milk
75ml sunflower oil
Prep: 5 mins


Cook: 20 mins


Preparation Method

  • Mix all the ingredients and beat well then distribute evenly among 12 paper cases. It's that simple!
  • Bake in a preheated oven at 200 for around 20 minutes
  • I am the world's worst baker but with a simple recipe like this, even I can make a nice cake and there is something so rewarding about people enjoying a good home made cake that you have produced yourself.
  • These muffins make great after school snacks or weekend breakfasts if they are lucky! They are also perfect for using up the softly sad banana rejects!!
